Cépages :
25 % de Syrah de chez Vincent Lafage à Canet en Roussillon, Pyrénées occidentales. 25% Alicante Bouschet et 50% Merlot du terroir de Carcassonne, chez Béa et Thierry Gout (Aude).
Vinification :
Vendanges du 24 aout 2021.
Syrah et Alicante en grappes entières dans le Merlot en pressurage directe.
15 jours de macération, tirage du jus de goutte en fûts de 400 litres.
Le reste est laissé en macération pendant 3 semaines, puis pressé et mis en fûts de 400 litres également.
Une année en fût pour l’ensemble puis assemblage avant vendanges 2022.
Mise en bouteille le 2 novembre 2022 sans aucun soutirage.
Pur jus de raisins, rien d’autre. Rien n’est ajouté, rien n’est enlevé.

Winemaking:
Harvest on August 24, 2021.
Whole cluster Syrah and Alicante in direct pressing Merlot.
15 days of maceration, drawing of the free juice into 400 liter barrels.
The rest is left to macerate for 3 weeks, then pressed and put into 400 liter barrels as well.
One year in barrel for the whole then blending before the 2022 harvest.
Bottled on November 2, 2022 without any racking.
Pure grape juice, nothing else. Nothing is added, nothing is taken away.
